Cut the carrots and zucchini in sticks. Remove stem from the asparagus.
Cut the cheese into strips. Fillet the Coliman Whole Cactus in half and place in pan until golden brown. Place the veggies on the pan and sauté, add salt and pepper to taste. Once softened, roll the cactus and fill with veggies and cheese.
Place Coliman Whole Cactus in a hot pan turning it on both sides until brown. Chop mushrooms into this slices. Cut onion into half moon slices. Season the mushrooms and onions with salt and pepper. Place this mixture atop cactus and top with cheese. Place in the oven at 200 C. Allow it to gratin and remove from oven in 5 minutes.
